Our story begins with something very simple: we love real artisan panettone — but we couldn’t find any in local bakeries. What we found instead, as most people do, were industrial panettoni stacked in supermarkets and delis, baked months in advance and made to last rather than to delight.
Industrial panettone has its appeal — especially its aggressive price point — but it’s miles away from how true artisan panettone should taste. It often contains preservatives, margarine or other vegetable fats instead of butter, egg powder instead of fresh eggs, higher sugar content, and industrial candied fruit. The result is a product that may look the part, but doesn’t capture the soul of the original Italian creation.
That’s how the idea took shape: why don’t we start baking real panettone ourselves? London is full of food lovers, and we believed there must be others who would want to experience the flavour and aroma of a genuine artisan panettone — without having to fly to Italy.
So we made a promise to ourselves: to bake authentic panettone right here in the UK, using traditional Italian techniques and only uncompromising ingredients. Because truly fresh products can’t possibly come from 3,000 miles away.
